I swear, every time I think I’ve seen it all in the world of weight loss food, something like cheese and brinjal pops up. I mean, who would’ve thought pairing cheese (which isn’t exactly known for its slimming properties) with baingan could be part of some weird weight loss scheme? But here I am, talking about it.

The idea of using baingan (or eggplant, if you’re fancy) actually makes sense. It’s all watery and filling – like a sponge that soaks up whatever flavor you throw at it. Okay, actually, that’s kinda cool. If a food wants to be that flexible, who am I to say otherwise? Now add cheese: a glorious, melty, calorie-laden delight. Suddenly, it sounds like a plot twist.

Yet, I get it. When you’re trying to make boring veggies palatable, you gotta bend some rules – cheese on brinjal, why not? It’s like making veggies accessible to people who usually run screaming at the sight of green anything. Although, I have to admit, when sprinkled with a few Indian spices, everything tends to taste exciting.

But come on, I’m skeptical. This’ll either be amazing or a disaster. Or maybe it’s just an excuse for cheese lovers to feel better about themselves. ‘Look, Mom! I ate veggies!’ while conveniently ignoring said veggies are smothered in another food group entirely.

Do I need to try it myself to pass judgment? Probably. But for now, the idea alone is amusing enough. My eyes still hurt. I need coffee. Ugh.
