not your typical pumpkin pie (nope!)
Okay, I just stumbled upon something absolutely bonkers—or maybe genius if you’re into that sort of thing: a 10-minute keto no-bake pumpkin cheesecake. First off, the fact that it claims to be ‘no-bake’ is both relieving and suspicious. Like, are we sure this is not one of those things where you spend more time searching for that specific ingredient you didn’t know existed than actually making the thing? But let’s assume for a second that it’s possible. Apparently, it needs no oven because… magic, I guess.

So, all you need is some canned pumpkin, cream cheese (because duh, cheesecake), and a bunch of spices that suggest autumn is vomiting all over your kitchen. On the plus side, it’s supposed to be low carb, so I can see all those ketogenic folks frothing at the mouth, ready to devour this thing faster than you can say, ‘Pumpkin spice what now?’
Anyway, it’s said you’ll be done with this magnificent concoction in under 10 minutes. I mean, you could probably make this while background binging a questionable reality show. The mixture of pumpkin mush with creamy cheese sounds odd, yet oddly satisfying. I can imagine it’s like eating pumpkin pie’s rebellious cousin who’s into health trends a little too much.
And speaking of trends, keto and low-carb are still ruling the world it seems. Everyone wants to live in their perpetually carb-free universe, and now there’s a dessert for it. It’s the dessert that says, ‘I’m sweet, but also, I respect your macro goals.’
I saw this lunatic list of meal plans and realized this recipe fits right in among the chaos. Seriously, are people out there actually eating like this every day? And do their kitchens explode with an array of almond flour and obscure sweeteners?

If you manage to pull this off, let me know if it tastes more like pumpkin trifle or an epic cheesecake fantasy. My eyes still hurt from reading all the directions. I need more sleep to process this. Ugh.
